Pearl millet dosa is a very nutritious breakfast which has proteins, carbohydrates, minerals and iron. I have not used the ready made flours. In this description I have made the batter using the whole grains. Kambu dosa is soft, delicious and crispy suits all age groups. Kambu can be digested easily and are also good for diabetics. Do try this healthy recipe for your breakfast.

Ingredients: Cuisine- Indian/South Indian/ Tamilnadu

- Kambu / Pearl millet – 1 cup
- Urad dal – 1/4 cup
- Parboiled rice – 1/4 cup
- Fenugreek seeds – 1 tbsp
- Castor seeds – 4-5 nos
- Rock Salt – 1 tbsp
Wash and soak Kambu, Urad dal, rice and fenugreek seeds for 4 – 5 hours. Soak the castor seeds after removing the skin. The skin is considered to be poisonous. Adding castor seeds makes the dosa soft and fluffy. We add castor seeds for all the idly dosa batter to get soft and fluffy idlies. We get the castor seeds from the castor plants grown in the fields for the sake of oils. They are also grown as intercrops along with maize to prevent pest attack. The castor seeds are dried and the husk is removed and stored for cooking.

First grind the urad dal, fenugreek and castor seeds together. Add water in batches and grind them smoothly. Do not add too much water. Then grind rice and millet together adding water in batches. Transfer all the contents to a container and add 1 tbsp of rock salt and mix them together. Rock salt aids in fermentation of the batter. Set aside for fermentation for 6 – 8 hours in a warm dry place. Do not refrigerate.



After fermentation the batter becomes thick. Add little water to adjust to the pouring consistency. Do not add too much water the batter becomes thin and dosa doesn’t turn crispy.

Heat a dosa pan in medium flame. Once the pan is heated up pour a laddle full of batter and drizzle oil on the sides. When the dosa turns golden brown flip the dosa to the other side. If you try to flip the dosa when soft it tears up, so wait for the dosa to be cooked on one side. Serve the dosa hot with chuney or sambar.
